A kitchen windowsill is a work surface, a splash zone and a steam vent before it is a plant shelf, so the plant has to survive the room as well as the light. A kitchen sill is a work surface first
Every other windowsill in an apartment holds only what you put on it. The kitchen sill holds the dish rack, the wet sponge, the phone you are following a recipe on, and whatever you needed both hands to move.
This is why kitchen plants fail more often than their light level explains. The pot gets shoved to one side, then to the back, then onto the counter behind the kettle for a week. Nothing about that sequence is a care mistake and none of it shows up on a light chart, but the plant ends up somewhere dark and stays there.
The design fix is to give the plant the least useful part of the sill, which is usually the end furthest from the sink and the range, and to keep it in a pot small and stable enough that moving it is a one-handed job. A plant on a kitchen sill that cannot be moved with one hand will be moved badly.
Which way the kitchen window faces still decides
The room is the constraint but the exposure is still what sets the ceiling. These are Illinois Extension's bands applied to the sill itself, which is the only position we are talking about here.

The grease film is a light problem
This is the one factor that belongs to kitchens and appears in no kitchen-plant list, and it is not cosmetic.
Clemson Cooperative Extension notes that indoor plants may collect dust or greasy films that dull their appearance, and states plainly that clean leaves are favorable to healthy growth. A kitchen is where that greasy film is manufactured. Anything cooked in oil puts a fine aerosol into the room, and it settles on horizontal surfaces near the range, which on a small kitchen sill includes every leaf facing up.
The placement consequence is simple and it is the reason for the "furthest from the range" rule above. A plant two feet from a cooktop accumulates film faster than one across the room, and a plant with large flat leaves accumulates it faster than one with narrow upright ones. A kitchen is the only room in an apartment that is routinely taken outside the recommended range and then back again, twice in an evening.
University of Georgia Extension gives the best temperature range for indoor plants as 70 to 80 degrees Fahrenheit during the day and 65 to 70 at night. A kitchen with an oven on runs above the top of that range, and a kitchen window cracked open to clear steam in February puts outdoor air directly onto the sill, which is the coldest thing that happens to any plant in the home.
That second half is what actually does the damage, and it is a placement problem with a placement answer. If your kitchen window is the one you open to vent, the sill is not a home. It is a daytime position, and the plant belongs on a shelf or a counter a little back from the window in the heating season. In summer the same open window is harmless and the sill is fine.
The steam question, answered honestly
Kitchens and bathrooms get recommended for plants on the same reasoning, which is that both are humid, and the reasoning is weaker than it sounds.
Mississippi State University Extension puts centrally heated and cooled buildings at 10 to 30 percent relative humidity, against the 70 to 90 percent of the native climates of most tropical plants, and Georgia Extension gives typical homes 10 to 20 percent, counting anything below 20 percent as low. Boiling a pot of pasta lifts a kitchen briefly and the extractor fan removes it again. Whether that intermittent rise measurably benefits a houseplant is a plant-care question rather than a placement one, and Maryland Extension's indoor plant resources are the independent place to read about humidity. What placement can say is that a kitchen's humidity is not a reason to put a plant somewhere its light and temperature do not work.

A shallow sill means a small pot, a small pot means a small root volume, and a small root volume in the warmest, most frequently disturbed room in the apartment is the least forgiving combination in indoor plant placement. Choose plants that are naturally small at maturity rather than young specimens of large ones. Spider plant (Chlorophytum comosum), parlor palm (Chamaedorea elegans), golden pothos (Epipremnum aureum), jade plant (Crassula ovata), haworthia (Haworthia spp.) and African violet (Saintpaulia ionantha) all fit a narrow sill in a small pot.
